Stuffed Sweet Potatoes
whole berry cranberry sauce
cut into small pieces
Scrub potatoes and pierce with a fork. Place on a microwave-safe plate and microwave for 10-15 minutes, turning once, until tender. Remove from oven and set aside to cool to the touch.
When potatoes are cool, cut in half and scoop out the flesh (placing in a large bowl), leaving about 1/4" thick potato in the shell. Place onto a baking sheet lined with parchment paper.
Add butter, brown sugar, salt, and pepper to potato mixture in bowl and mix well. Stir in cranberry sauce, turkey, pecans and marshmallows.
Spoon mixture into shells and bake in a 425 degree oven for 8-12 minutes or until heated through.
