Easy Stuffed Sweet Potatoes Recipe With Turkey And Cranberry

Stuffed Sweet Potatoes

  • 4 sweet potatoes
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 1/2 teaspoon salt
  • dash pepper
  • 1/3 cup whole berry cranberry sauce
  • 3 cups cooked turkey cut into small pieces
  • 1/2 cup chopped pecans
  • 1/2 cup mini marshmallows



  • Scrub potatoes and pierce with a fork. Place on a microwave-safe plate and microwave for 10-15 minutes, turning once, until tender. Remove from oven and set aside to cool to the touch.
  • When potatoes are cool, cut in half and scoop out the flesh (placing in a large bowl), leaving about 1/4" thick potato in the shell. Place onto a baking sheet lined with parchment paper.
  • Add butter, brown sugar, salt, and pepper to potato mixture in bowl and mix well. Stir in cranberry sauce, turkey, pecans and marshmallows.
  • Spoon mixture into shells and bake in a 425 degree oven for 8-12 minutes or until heated through.
