– 2 tablespoons oil – 1 small onion, diced – 1 tablespoon minced garlic – 8 white potatoes, sliced 1/8″ thick – 1/2 cup chicken broth – salt and pepper to taste – chopped fresh parsley, optional for serving
Add oil, onion, and garlic to a skillet. Heat on medium heat, stirring frequently until onions are tender – about 3-5 minutes. Add potatoes and chicken broth and cover. Heat over medium heat for 10 minutes.
The mixture will boil and bubble. Stir every 2-1/2 minutes. Serve topped with salt and pepper and parsley.
