Yesterday I posted a video challenging you to take a week off from food shopping and ordering out. Instead, I asked that you “shop your pantry” and cook meals using WHATEVER YOU HAD ON HAND. Well, I’m doing it and SO FAR SO GOOD.
Tonight’s dinner consisted of chicken, onions, garlic, peppers and 2 cans of string beans… all tossed in Italian dressing. WHAT? So bizarre. But you know what? It was good!! After Thanksgiving, I got about 6 cans of string beans on sale for DIRT CHEAP and I’ve just been LOOKING AT THEM for months.
I said no MATTER WHAT I was going to use them. Thank goodness two are gone. 🙂
We also had mashed potatoes as a side. I am working right through that pantry people!! And sure — the dishes I am making are… interesting. But like I said in the video, it’s all about using what you have and trying to save money for one week at a time.

It sounds good. I like anything in Italian dressing. I marinate the meat for shish kabobs in them. For the string beans I take the lids of the cans and hold the cans over the sink and press as much water out of them as I can. Then I saute them in a little olive oil and some minced garlic until all the liquid is gone. If I have diced canned tomatoes I add them and cook them until all the liquid is gone. They look kind of ragged but they're really good.
