Yum! That’s my first response after trying Seapak’s™ new Popcorn Fish! Kind of like Seapak’s popular “Popcorn Shrimp” they have just introduced Popcorn Fish. I read up on them before trying them and I was really happy to read that they are bite size pieces of fish cut from WHOLE fillets of Pollock. Not that minced fish that you get with so many other fish sticks! The breading was soft and not crunchy, they were really good! A few other “mom-friendly facts:” There are lower calories and lower saturated fats than your typical fish stick and also no high fructose corn syrup and no MSG!
I’m not really one to eat “kid foods” as I call them around here…Not that I don’t love them, but I’m trying to keep my girlish figure..haha! You know, things like Mac & Cheese, Nuggets, Fish sticks….so I’ll be honest, I thought Popcorn Fish would be going in the same category. Oh Boy…I was so wrong! Along with the Popcorn fish I received a few recipes and gave the Fish Tacos a try! I had them not ONCE…but TWICE! Two days in a row for lunch! Quick and easy and sooo sooo good! Needless to say, I will be buying Seapak Popcorn Fish for easy after school snacks and also for yummy lunches for me! Good-bye Minced Fish Sticks! I’m sending you back out to sea!

My fish tacos…aka…my lunch 2 days this week!
Here is the recipe from the Seapak Website for the fish tacos I made.I didn’t quite follow the directions exactly and didn’t add the beans or the mandarin oranges, but mixing the cabbage with honey and lime juice was FANTASTIC! I’m a fish taco junkie and always order them at restaurants. These were just as tasty as many that I’ve been served!
Prep Time: 8 minutes Cook Time: 15 minutes
Makes: 8-10 tacos
1 (22 oz) package SeaPak Popcorn Fish, frozen
8-10 soft flour, heated according to package directions (can substitute crispy corn tortillas)
1 (16 oz) bag of fresh slaw (or 1/2 head of shredded cabbage)
1 (11 oz) can mandarin oranges, drained
1 (15 oz) can black beans, rinsed and drained
1 avocado, diced
2 Tablespoon fresh cilantro chopped (optional)
Juice from 1 lime (about 2 tablespoons)
1 tablespoon honey
Taco sauce (recipe below)
SeaPak’s Tasty Taco Sauce
8 oz sour cream
1 (1 oz) packet ranch dressing mix
1 (1.25 oz ) packet taco seasoning
PREHEAT oven to 425F.
BAKE popcorn fish according to package instructions.
MIX sour cream, ranch dressing and taco seasoning. (You can use a little milk to thin the sauce if desired.) Chill in the refrigerator until ready to serve.
PLACE slaw (or shredded cabbage), mandarin oranges, black beans, avocado, cilantro in a large bowl.
PLACE lime juice and honey in a small bowl and stir together. Pour over slaw mixture and toss until well mixed and coated .
ASSEMBLE tacos. Spoon 1-2 tablespoons of Taco Sauce onto a tortilla. Add slaw mixture and top with a hot popcorn fish. Serve immediately.
