Oh man am I excited about this one! My friend invited me over to capture her quick and easy recipe for Pineapple Salsa Chicken. You are going to DIE at how doable this one is. And at 4 points a serving… Weight Watchers followers just can’t beat it.
All you need is a pound of chicken, 8 oz of salsa (Cheryl prefers Pace salsa) and 20 oz of crushed pineapples. HELLO! The salsa and the pineapples can be stored in your cabinet for a night where you need to whip up a quick but tasty treat.
Step 1: Drain the pineapples. Make sure you take the time to really get all the liquid out otherwise the dish gets too moist.
Step 2: Pour the salsa and the drained pineapples into a mixing bowl… and mix.
Step 3: Cut the chicken into bite sized pieces.
Step 4: Spray the pan with PAM cooking spray and brown the chicken. Once you have the chicken to the color you are happy with, add the sauce mixture and toss.
Step 5: Cheryl serves the dish over brown rice. I’ve tasted it and it’s YUMMY. It officially has been added to my list of things to make. Thanks so much for participating!
