Beef mac and cheese casserole is one recipe I whip up when I am in a dinner rut. It helps me clean out my produce drawer, fills us up, and is so delicious. It is a total comfort food, and it always hits the spot when we don’t know what to make for dinner.

Have peppers that are about to go? Throw them in. Looking at zucchinis that only have a day or two left? Chop them up! How about those mushrooms that you’ve been avoiding? They work as well!

That’s the beauty of this hamburger hotdish. You can sneak in plenty of extra veggies and nobody in your family will even notice.

Ingredients: 

  • 1 box, 16 ounces, pasta, cooked and drained and kept warm – I used Cavatappi pasta
  • 1lb ground beef – I used Panorama Organic Grass-Fed 85/15 Ground Beef
  • 1/2 cup chopped onion
  • 1 green pepper, chopped
  • 1 tablespoon minced garlic
  • 1-1/2 tablespoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 can, 14.5 oz, Italian style diced tomatoes
  • 3 cups shredded cheddar cheese, divided

How To Make Hamburger Mac and Cheese Casserole

Preheat oven ton 350 and grease a 9×13 baking pan with nonstick cooking spray. Set aside.

Add beef, onion, green pepper and garlic to a skillet and cook until beef is browned. Drain grease. Add spices and tomatoes and mix well.  Pour pasta into prepared baking pan and add beef mixture. Mix well.

Stir in 2 cups of cheese and mix well. Top with remaining cheese.

Cover with a piece of foil sprayed with nonstick cooking spray (so the cheese doesn’t stick to the foil). Bake for 20-25 minutes or until hot. Serve immediately.  This dish serves 8-12 people.

What to Serve With Macaroni Casserole 

While this hotdish can be a meal all on its own, it’s nice to have options to serve on the side. Looking to round out this dinner idea? No problem! Consider:

Storing Leftovers 

Like any casserole, this is a family favorite for a reason. The leftovers taste just as good if not better the next day. Store your leftovers in an airtight container. Store for up to three days in the fridge.

Then reheat in the microwave or on the oven. If you reheat in the oven, then you will cover the baking dish with aluminum foil and heat up until it is fully warmed. 

Can You Freeze This Casserole 

You can absolutely freeze this macaroni beef casserole. Simply place your leftovers in a proper freezer-friendly container, and store for up to three months. 

When you are ready to eat, be sure to place your dish in the fridge the night before to help defrost. Then reheat as needed. Don’t have time? No problem! Simply toss your dish straight in the oven from frozen, covered. Cook at 350 degrees until it is warmed through.

Does This Recipe Double Well 

If you are looking for an affordable and easy way to feed a crowd, this recipe is worthy! Simply double up and cook in multiple baking dishes. It bakes up beautifully, will feed a crowd, and leave them feeling satisfied! 

Variations To Recipe 

  • Change out the pasta to any smaller shaped pasta you would like.
  • Use different kinds of cheese or choose a mix of cheese to change up the flavor of the mixture. 
  • Feel free to swap the ground beef with turkey or even a ground pork 
  • Add a splash of hot sauce on top as you serve for those who like it a bit spicy. 
  • Add on toppings like sliced green onions, a dollop of sour cream, etc.
