Strawberry Bruschetta Baguettes INGREDIENTS: 

  • 1 french baguette, sliced on a diagonal, ¾-inch thick 
  • 1 1/2 tbsp. minced garlic 
  • 2 cups fresh Roma tomatoes, chopped
  • ½ cup fresh basil, chopped
  • 1 cup strawberries, chopped, hull, and stem removed
  • salt and pepper to taste
  • 1 tbsp. olive oil
  • 1 tbsp. balsamic vinegar
  • 1/2 stick of butter- melted 
  • 8 oz herbed Goat cheese
  • chopped basil to garnish

Directions For Strawberry Bruschetta

In a medium mixing bowl, add chopped tomatoes, strawberries, minced garlic, olive oil, balsamic vinegar, and basil together. Breathe it all in and smell that fresh goodness. YUM! 

Chop up the basil and then add it to the strawberry mixtures. Toss everything to combine.

You should really set everything aside for one hour. That will ensure that the juices and flavors mingle. If you are short for time, no one will judge you. No, really. The world won’t implode. Do you.

Add salt and pepper to taste. Pre-heat oven for 350′


Place your baguettes on a cookie sheet and brush with melted butter. Bake them for 5 minutes, just until slightly browned. Be sure to watch them because if your oven is anything like mine… it is evil. I need a new oven in the WORST WAY. 


Next, be sure to spread each piece of bread with some goat cheese. Then spoon the fresh bruschetta on top of the goat cheese. You are almost ready to enjoy, my friends. The last step is to garnish with fresh basil and serve. YAHOO!  ENJOY!!
