    Are you looking for an easy stuffed sweet potatoes recipe? I have to be honest with you –  I don’t make sweet potatoes very often. We typically only make them around Thanksgiving. Well, here is a brand new twist to an old classic. Super easy to make and absolutely delicious to eat.  This stuffed sweet potato recipe will have everyone asking for seconds – so you might want to double up. LOL

    I love a recipe that doesn’t require a ton of ingredients.  These stuffed sweet potatoes only need a handful of goods but pretty much make a complete meal because your protein is already included.  Add a side salad and a veggie and you will be good to go! We included cooked turkey in this recipe since we are so close to Thanksgiving. However, you could absolutely substitute turkey for chicken if you’d like.

    Easy Stuffed Sweet Potatoes Recipe Ingredients:

    • 4 sweet potatoes
    • 2 tablespoons butter
    • 2 tablespoons brown sugar
    • 1/2 teaspoon salt
    • dash pepper
    • 1/3 cup whole berry cranberry sauce
    • 3 cups cooked turkey, cut into small pieces
    • 1/2 cup chopped pecans
    • 1/2 cup mini marshmallows

    Directions for Easy Stuffed Sweet Potatoes Recipe:

    Scrub potatoes and pierce with a fork. Place on a microwave-safe plate and microwave for 10-15 minutes, turning once, until tender. Remove from oven and set aside to cool to the touch.

    When potatoes are cool, cut in half and scoop out the flesh (placing in a large bowl), leaving about 1/4″ thick potato in the shell. Place onto a baking sheet lined with parchment paper.

    Add butter, brown sugar, salt, and pepper to potato mixture in bowl and mix well. Stir in cranberry sauce, turkey, pecans and marshmallows.

    Spoon mixture into shells and bake in a 425-degree oven for 8-12 minutes or until heated through.
