Keto Cauliflower Stuffing Recipe – How To Make Low Carb Stuffing For The Holidays

This cauliflower stuffing recipe is filled with great flavor and has all the seasonings of traditional stuffing. If you are on a low carb diet, this is a great recipe to keep in your back pocket whenever you want to substitute out the real thing. Perfect for Thanksgiving Day or any given Sunday. Cauliflower is such a versatile veggie that it works with most meals you have planned for the week outside of holiday cooking.

Most people think about cauliflower stuffing as a dish only for people who are on a keto diet, but that’s just not the case. Using the below recipe as my base, I usually love to toss in some savory herbs, cooked sausage, caramelized onions, and then I have a full meal waiting for the kids. We aren’t a family that is on a restricted diet. We just love the way this great stuffing tastes! It’s the real deal. True story. 😉

But if you are monitoring your carb intake, then this is the better way to serve this Thanksgiving favorite. I know a lot of people say that the sweet potato casserole is their favorite, but on our holiday table, we make sure to have both (with a side of cranberry sauce)

Keto Cauliflower Stuffing Ingredients

Ingredients For This Easy Keto Stuffing Recipe:

As a note, if you’d like to use riced cauliflower instead of having to pulse a full head, feel free. You could also start out with cauliflower florets to make your prep time smoother.

  • 1 head of cauliflower, chopped then pulsed 4-5 times in a food processor
  • 2 celery stalks, sliced in half lengthwise and chopped finely
  • 2 carrots, peeled and sliced in half lengthwise and chopped finely
  • 1 onion, chopped small
  • 2 cups mushrooms, chopped
  • 4 tablespoons of butter
  • ½ cup chicken broth or stock (or vegetable stock)
  • ¼ cup fresh parsley
  • 1 tablespoon fresh rosemary
  • 1 teaspoon ground sage
  • Salt and black pepper to taste

Directions For Low Carb Stuffing Recipe:

Melt your butter in a deep, large skillet over medium heat on your stove top. Add chopped celery, carrots, and onion and cook for about 8 minutes, stirring occasionally.

Add chopped cauliflower and mushrooms, and stir. Add salt and pepper and continue to cook for about 10 additional minutes. Watch to see the vegetables soften. 

Add chicken stock, fresh and dry herbs, and stir well. Taste and add additional salt and pepper if you think it is necessary. Cover and simmer until liquid is absorbed (about 12-15 minutes), stirring occasionally. Serve warm.

Variations and Tips

  • Consider adding fresh thyme, chopped-up cooked sweet potatoes, pork sausage, turkey sausage, and additional poultry seasoning to your dish. These traditional flavors will add an entirely new boost to this meal. Any fresh herbs you have on hand will do!
  • As mentioned, if you’d like, you could start off with cauliflower rice instead of having to dice a full head to start. That will save you time with prep. It’s all about healthy eating and both scenarios work.
  • If you don’t want to use butter, please feel free to swap for olive oil or avocado oil.
  • You can freeze leftovers, just be sure to place everything in an airtight container and thaw out the dish completely before you are ready to reheat.
  • This is one of those dishes you can prepare the night before. You can save yourself some time on the big day. So, yes! Feel free to prep ahead. When you are ready to serve, just heat it on the stove with a bit more butter until it is warmed through. Or you could microwave it if your stove is completely taken over.
