Getting Gorgeous In The Kitchen: My Grandma’s Roasted Potatoes Recipe

I love rustic cooking. I’m talking simple and to the point. Only a handful of ingredients but the flavors cannot be denied. Here is one of my favorite side dishes of all time — roasted potatoes. But not just any roasted potatoes recipe, this is my grandmother’s design that she learned from her mother.

And are you ready for this? In Malta, waaaayyyy back then, they didn’t have ovens. So, how did they make these potatoes? They would bring it to the baker before church. After he finished baking all the bread, he would cook everyone’s dishes for them – whether it be this potato dish or ziti or anything else. Talk about community effort!

Anyway – here we go. Nice and easy!

Preheat oven to 450 degrees

Ingredients:

  • 4 large potatoes – peeled and cut into four
  • 1 large onion – peeled and sliced
  • 3 tablespoons olive oil
  • 1 cup of cold water
  • paprika
  • salt and pepper

Directions:

Place the onions, potatoes, oil and water together in a 8×13 baking dish. Mix. Sprinkle salt and pepper to taste and toss. Then lightly cover with paprika.  Place in preheated oven and bake for 45-50 minutes uncovered.

Delicious! And easy!
